Situation
Situation : Notre Fourchaume provient des vignes les plus fraîches de ce terroir exposé ouest/sud-ouest. Composé de marnes argilo-calcaires du Kimméridgien avec des argiles bruns, le sol est peu caillouteux et assez profond, bien pourvu en réserves hydriques et à la fois drainant.
Le Premier Cru Fourchaume est le « porte drapeau » des Premiers Crus de Chablis. Il est grand en surface (140 ha) et donne un vin remarquable à la fois minéral et généreux, flatteur et complexe.
Vinification & Aging
The carefully settled grape juice is transferred to stainless steel vats and 20% oak barrels for a high precision fermentation.
The wine is then left in contact with its fine lees for several months and carefully aged with frequent tastings carried out to determine what operations, such as stirring (bâtonnage) or racking, need to be performed.
Blending is carried out with the utmost precision to ensure optimum balance in the finished wine.
Tasting notes
Attractive pale-yellow hue.
The mineral nose discloses chalky notes and a hint of smoke. Delicate aromas of wheat flour and springtime flowers (snowdrop, lily of the valley) intertwine with notes of ripe citrus fruit, yellow stone fruit and a touch of white pepper.
The palate is deep,dense and intense with excellent tension, characteristic of grapes harvested at perfect maturity in this mineral terroir. Notes of nougat and acacia honey linger on the saline finish.
