Situation
Situation : Notre Vaucoupin provient des vignes les plus fraîches de ce terroir situé sur le flanc d’une vallée très pentue et exposé sud-est.
Composé de marnes argilo calcaires du Kimméridgien avec des argiles bruns, le sol est caillouteux, peu profond et très drainant.
Le Premier Cru Vaucoupin est un « porte drapeau » des Premiers Crus de Chablis. Il reste cependant confidentiel (45 ha) et donne un vin remarquable à la fois minéral et structuré, élégant et complexe.
Vinification & Aging
The carefully settled grape juice is transferred to stainless steel vats for a high precision fermentation.
The wine is then left in contact with its fine lees for several months and carefully aged with frequent tastings carried out to determine what operations, such as stirring (bâtonnage) or racking, need to be performed.
Blending is carried out with the utmost transferred to stainless steel vats for a high precision fermentation.
Tasting notes
Lovely pale gold in colour.
The highly expressive nose is fine and complex, boasting notes of white flowers (acacia) and citrus (lemon, lime) complemented by a slight hint of oak and aromas of baked goods (almond, honey, angelica).
The plate is intense and taut, expressing considerable freshness with lemony citrus notes, lemon verbena, bergamot and a touch of mint. A chiseled, elegant wine endowed with perfect balance between acidity and roundness along with a nuance of refreshing citrus bitterness on the finish.
