Ses 10,8 hectares orientés Sud à Sud/Ouest sont baignés de soleil une bonne partie de la journée. Les sols sont majoritairement argilo-calcaires et de couleur brunes, certaines parcelles sont couvertes d’argiles plus blanches de faible épaisseur.
En bordure du Climat Preuses chemine une ancienne voie romaine qui portait le nom de «voie pierreuse». Au fil des siècles, la «pierreuse» est devenue «la preuse». Preuses tire donc son nom de «pierre», tout simplement.

Chardonnay
Sélection très précise des parcelles sur les coteaux frais. Sols de marnes argilo-calcaires du Kimméridgien au coeur desquels le calcaire est constellé de petites huîtres en forme de virgule de quelques millimètres appelées Exogyra Virgula. Ce sol remarquable donne toute son originalité aux vins de Chablis et leur confère leur minéralité spécifique. La position septentrionale de ce vignoble et les nuits fraîches préservent l’acidité des raisins, apportant une jolie tension aux vins.
Acclaimed Burgundy producers and first cousins, Dominique Gruhier and Laurent Delaunay have joined forces to create Grand Calcaire, a contemporary interpretation of the fine wines from Chablis, famous around the world for their superb minerality and northern climate character.
Dominique Gruhier who, like Laurent, was introduced to ‘vines and wine’ by his family at a very young age, has been a wine producer in the Chablis region for 30 years.
His guiding principle: true expression and respect for the terroirs.
Oenologist and winemaker, Laurent Delaunay is a successful entrepreneur with a great knowledge and love of the Burgundy terroirs.
His ambition: to reveal the true expression of the terroirs in his wines with ever greater precision.

If you want to create a style that best represents Chablis, an unforgiving, demanding and cold terroir, whose wines call for precision, subtlety and tension, then you have to take a step back and adopt a different approach. Laurent and Dominique have taken the time to carefully identify the most promising vineyard plots in the heart of this wine region of multiple soil and exposure combinations, ruled by a rather rough northern climate.
The culmination of an aspiration : reappropriating the essence of Chablis
It is from the sum of their vocations, their know-how and their passions that this desire to create their own interpretation of one of the most famous fresh and mineral wines in the world was born. In their quest for absolute purity, Laurent and Dominique have often selected shaded north-facing plots as well as the misty slopes with Kimmeridgian clay-limestone marl soil.
It is this typical ‘cool terroir’character that they seek to allow them to craft singular, lively wines.
