Situation
Situation: Our Fourchaume is made from grapes grown in the coolest plots of this west/south-west facing terroir. The soil here is composed of relatively deep clay-limestone marls from the Kimmeridgian with brown clays and a low pebble content which provide the land with excellent water reserves and drainage properties.
The Premier Cru Fourchaume is the flagship for the Chablis Premier Crus. It has a large surface under vine (140 ha) and results in wines that are both generous yet mineral, seductive and complex.
Vinification & Aging
The grapes are harvested at their peak of ripeness. The carefully settled grape juice is transferred to stainless steel vats and 20% oak barrels for a high precision fermentation.
The wine is then left in contact with its fine lees for 12 months and carefully aged with frequent tastings carried out to determine what operations, such as stirring (bâtonnage) or racking, need to be performed.
Blending is carried out with the utmost precision to ensure optimum balance in the finished wine.
Tasting notes
Lovely pale golden-yellow color, enhanced by delicate green hues.
The aromatic expression is complex and subtle. The nose is dominated by a superb minerality, characteristic of great Chablis. This is followed by delicate floral notes of white flowers (narcissus) and fruity aromas of citrus, such as lime and mandarin. A hint of oak evokes frangipane, accompanied by indulgent pastry nuances (milk bread, brioche with candied fruits, buttery shortbread). The minerality reappears with notes of iodine and flint, heightened by a refreshing touch of white pepper, coriander, and lemongrass.
On the palate, the attack is broad and mineral-driven, with persistent freshness. The finish, dominated by citrus (lime, yuzu, bergamot, and mandarin), leaves a pleasant bitterness that extends the wine’s length. A very enjoyable wine, offering great freshness and a superb expression of minerality.
