Dominique Gruhier who, like Laurent, was introduced to ‘vines and wine’ by his family at a very young age, has been a wine producer in the Chablis region for 30 years.

His guiding principle: true expression and respect for the terroirs.

Laurent Delaunay

A journey of excellence dedicated to terroir wines

Oenologist and winemaker, Laurent Delaunay is a successful entrepreneur with a great knowledge and love of the Burgundy terroirs.

His ambition: to reveal the true expression of the terroirs in his wines with ever greater precision.

An emblematic style

If you want to create a style that best represents Chablis, an unforgiving, demanding and cold terroir, whose wines call for precision, subtlety and tension, then you have to take a step back and adopt a different approach. Laurent and Dominique have taken the time to carefully identify the most promising vineyard plots in the heart of this wine region of multiple soil and exposure combinations, ruled by a rather rough northern climate.

Offering a contemporary interpretation

It is from the sum of their vocations, their know-how and their passions that this desire to create their own interpretation of one of the most famous fresh and mineral wines in the world was born. In their quest for absolute purity, Laurent and Dominique have often selected shaded north-facing plots as well as the misty slopes with Kimmeridgian clay-limestone marl soil. 
It is this typical ‘cool terroir’character that they seek to allow them to craft singular, lively wines.

Dominique and Laurent inherited the family culture of celebrating the wines of Burgundy and the love of precision winemaking from their forefathers. Their individual paths, which have always crossed, followed and nurtured each other, have now converged in a common vision: to select grapes from specifically identified terroirs that Dominique oversees with partner winegrowers who share their vision of viticulture.

Dominique and his team vinify and monitor the wines daily in the Domaine de l’Abbaye du Petit Quincy winery. Then, through frequent and meticulous tasting sessions, Laurent and Dominique refine the style they are seeking: wines that are expressive and aromatic, open and intense, complex and multidimensional.
