Situation
Situation : Sélection très précise des raisins provenant des parcelles fraîches situées sur les plateaux de Chablis. Sols de calcaires bruns du Portlandien, qui contrairement au calcaire kimméridgien composant le sol de l’appellation Chablis, ne contiennent pas d’huître fossile.
La situation en plateau en altitude et les nuits fraîches préservent l’acidité des raisins, donnant des vins vifs et expressifs.
Vinification & élevage
The grapes were harvested at their peak of ripeness. The grape must is settled with precision before being fermented primarily in stainless vats with careful monitoring of the temperature and fermentation kinetics (< 18°C).
The wine is then aged on its fine lees for 16 months. These are stirred up once a week for the two first months to create even greater complexity.
Frequent tastings help to ensure the optimum development of the wine’s organoleptic qualities before the final blending stage.

Lovely pale yellow in colour.
The first nose is fine and subtle, redolent of fresh grapes, refreshing notes of cut grass and delicate spring flowers (narcissus).
The palate offers pleasing and refreshing acidity that is emphasized by fruity, slightly tangy flavours of just-ripe white peach and gooseberry. A hint of candy (pineapple and strawberry flavoured) lends pleasingly subtle sucrosity.
This is an expressive, taut easy-drinking wine that boasts a fresh, vegetal finish.
